Description

Air Fryer Stuffed Sweet Potatoes are a delicious and nutritious meal, perfect for a quick weeknight dinner. These sweet potatoes are crispy on the outside and filled with a savory mixture of black beans, corn, and cheese.


Ingredients

  • 2 medium sweet potatoes
  • 1/2 cup black beans (drained and rinsed)
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/4 cup chopped red onion
  • 1/4 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp chopped fresh cilantro (optional for garnish)
  • 1/4 cup sour cream or Greek yogurt (optional for serving)

Instructions

  1. Preheat the air fryer to 390°F (200°C).
  2. Wash and scrub the sweet potatoes, then pierce them several times with a fork.
  3. Rub each sweet potato with olive oil and season with salt.
  4. Place sweet potatoes in the air fryer basket and cook for 35-40 minutes, or until fork-tender.
  5. Meanwhile, in a bowl, mix black beans, corn, red onion, cumin, paprika, salt, and pepper.
  6. Once sweet potatoes are cooked, let them cool slightly, then slice them open lengthwise.
  7. Scoop out a small amount of the flesh to make room for stuffing.
  8. Fill each potato with the bean and corn mixture, then top with shredded cheese.
  9. Return stuffed potatoes to the air fryer and cook at 350°F (175°C) for 5 minutes, or until cheese is melted.
  10. Garnish with cilantro and a dollop of sour cream or yogurt, if desired. Serve warm.

  • You can substitute cheddar with vegan cheese for a dairy-free option.
  • Add avocado or salsa for extra flavor.
  • To make it spicier, mix in some chopped jalapeños with the filling.
