This refreshing Antioxidant Blueberry-Lemon Green Tea combines the bright flavors of fresh blueberries and lemon with the health benefits of green tea. Blueberry Juice:
- 16 ounces frozen blueberries, or 2 cups fresh blueberries or blueberry juice
- 1 cup water
- ¾ cup organic raw sugar
- 1 tablespoon fresh lemon juice
Lemon Tea:
- ½ cup lemon juice, freshly squeezed (about 4 lemons)
- 6 cups green tea (or black tea as a substitute)
- 6 tea bags or 6 teaspoons loose tea leaves
Instructions
- Make the blueberry juice: Combine the blueberries, water, raw sugar, and 1 tablespoon of fresh lemon juice in a medium saucepan. Bring to a boil over medium heat, then reduce the heat and simmer for 5 minutes. Crush the blueberries with a potato masher or immersion blender to release their juices. Strain through a sieve, reserving the juice and discarding the pulp. Let it cool.
- Make the lemon tea: Add 6 cups of hot water to the tea bags or loose tea leaves. For green tea, allow the water to cool to 170-180°F and steep for 3 minutes; for black tea, use boiling water and steep for 5-7 minutes. Strain out the tea leaves and let the tea cool.
- Combine and serve: Mix the blueberry juice, cooled tea, and remaining lemon juice in a large pitcher. Add ice or refrigerate to chill. Serve cold and enjoy!
