Description

A healthy and delicious make-ahead breakfast combining the flavors of apple pie with the convenience of overnight oats.


Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup unsweetened almond milk (or milk of choice)
  • 1/4 cup plain Greek yogurt
  • 1/2 apple, chopped
  • 1 tbsp chia seeds
  • 1 tbsp maple syrup (optional)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp vanilla extract
  • Pinch of nutmeg
  • Pinch of salt

Instructions

  1. In a mason jar or container, combine the rolled oats, almond milk, and Greek yogurt.
  2. Add in the chopped apple, chia seeds, maple syrup, cinnamon, vanilla extract, nutmeg, and salt.
  3. Stir all ingredients together until well combined.
  4. Cover and refrigerate overnight, or for at least 6 hours.
  5. In the morning, stir again and add a splash of milk if needed for desired consistency.
  6. Top with additional apple slices, cinnamon, or nuts if desired and enjoy cold or slightly warmed.

Notes

  • Use any variety of apple you prefer—Granny Smith for tartness or Fuji for sweetness.
  • This recipe can be made vegan by using plant-based yogurt.
  • Add nuts like walnuts or pecans for added texture and nutrition.
