A fresh and flavorful Asian Chicken Salad made with crisp vegetables, tender chicken, and a tangy sesame-ginger dressing. Perfect for a light and healthy meal.
Ingredients
- 2 cups cooked chicken breast, shredded
- 4 cups shredded Napa cabbage
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1/2 cup sliced green onions
- 1/4 cup chopped fresh cilantro
- 1/4 cup sliced almonds
- 1/4 cup crispy wonton strips (optional)
- 2 tablespoons sesame seeds
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons honey
- 1 tablespoon grated fresh ginger
- 1 garlic clove, minced
- 1/4 cup olive oil
Instructions
- In a large bowl, combine Napa cabbage, red cabbage, carrots, bell pepper, green onions, and cilantro.
- Add the shredded chicken on top of the vegetables.
- In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, ginger, garlic, and olive oil to make the dressing.
- Pour the dressing over the salad and toss until everything is evenly coated.
- Sprinkle sliced almonds, sesame seeds, and crispy wonton strips (if using) on top before serving.
- Serve immediately or refrigerate for up to 1 hour to let flavors meld.
Notes
- Use rotisserie chicken for convenience.
- Add mandarin oranges or edamame for extra flavor and nutrition.
