Description
A creamy and flavorful pasta dish made by baking cherry tomatoes and feta cheese until soft, then mixing with pasta for an easy one-pan meal.
Ingredients
- 2 cups cherry tomatoes
- 1 block (7 oz) feta cheese
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 10 oz pasta (penne or your choice)
- 1/4 cup fresh basil leaves, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Place cherry tomatoes in a baking dish. Add the block of feta cheese in the center.
- Drizzle olive oil over tomatoes and feta. Sprinkle with garlic, red pepper flakes, salt, and pepper.
- Bake for 30-35 minutes, until tomatoes are burst and feta is golden and soft.
- While baking, cook pasta according to package instructions. Drain and reserve some pasta water.
- Once baking is complete, mash the feta and tomatoes together in the dish to create a sauce.
- Add cooked pasta to the baking dish and mix well, adding reserved pasta water if needed to loosen the sauce.
- Stir in fresh basil before serving.
Notes
- Use whole-wheat or gluten-free pasta as desired.
- Add spinach or kale for extra greens.
- Adjust spice level by increasing or omitting red pepper flakes.
