Description

A creamy and flavorful pasta dish made by baking cherry tomatoes and feta cheese until soft, then mixing with pasta for an easy one-pan meal.


Ingredients

  • 2 cups cherry tomatoes
  • 1 block (7 oz) feta cheese
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 10 oz pasta (penne or your choice)
  • 1/4 cup fresh basil leaves, chopped


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place cherry tomatoes in a baking dish. Add the block of feta cheese in the center.
  3. Drizzle olive oil over tomatoes and feta. Sprinkle with garlic, red pepper flakes, salt, and pepper.
  4. Bake for 30-35 minutes, until tomatoes are burst and feta is golden and soft.
  5. While baking, cook pasta according to package instructions. Drain and reserve some pasta water.
  6. Once baking is complete, mash the feta and tomatoes together in the dish to create a sauce.
  7. Add cooked pasta to the baking dish and mix well, adding reserved pasta water if needed to loosen the sauce.
  8. Stir in fresh basil before serving.

Notes

  • Use whole-wheat or gluten-free pasta as desired.
  • Add spinach or kale for extra greens.
  • Adjust spice level by increasing or omitting red pepper flakes.
