Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste

For the Balsamic Glaze:

  • 1 cup fresh figs, halved
  • ½ cup balsamic vinegar
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped

Optional for Serving:

  • Arugula or spinach

Instructions

  1. Season the Chicken: Pat chicken dry and season with salt and pepper.
  2. Sear the Chicken: Heat olive oil in a skillet, sear chicken on both sides until golden. Set aside.
  3. Sauté Garlic: In the same skillet, sauté garlic until fragrant.
  4. Add Figs: Add figs and coat with garlic oil.
  5. Deglaze with Balsamic: Pour in balsamic vinegar, scraping the skillet.
  6. Add Herbs and Simmer: Stir in rosemary and thyme, simmer until thickened.
  7. Return Chicken to Pan: Place chicken back in skillet, spoon sauce over, cook briefly to combine flavors.
  8. Serve: Remove from heat and serve hot, optionally over arugula or spinach.

Notes

  • No fresh figs? Reconstitute dried figs in warm water for 10 minutes.
  • Balsamic glaze can be a thicker sauce substitute for vinegar.
