Ingredients
Scale
Main Ingredients
- 8 slices soft white or whole wheat sandwich bread, crusts removed
- 2 ripe bananas, sliced lengthwise into thin strips
Egg Mixture
- 2 large eggs
- ¼ cup milk
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
Cooking and Coating
- 1 tablespoon butter (for cooking)
- ¼ cup granulated sugar
- 1 teaspoon ground cinnamon (for coating)
Optional
- Maple syrup for serving
Instructions
- Prepare the Bread: Flatten each slice of bread with a rolling pin until thin enough to roll easily without breaking.
- Add Banana Filling: Place 2 to 3 thin slices of banana along one edge of each flattened bread slice and roll it up tightly around the banana strips.
- Make Egg Mixture: In a shallow bowl, whisk together eggs, milk, vanilla extract, and ground cinnamon until well combined.
- Prepare Cinnamon Sugar: In a small separate bowl, mix granulated sugar and ground cinnamon for the coating.
- Cook Roll-Ups: Heat a nonstick skillet or griddle over medium heat and melt the butter. Dip each roll-up into the egg mixture, allowing excess to drip off, then place seam-side down on the skillet. Cook for 2 to 3 minutes on each side until the roll-ups are golden brown and crisp.
- Coat Roll-Ups: Immediately roll the cooked roll-ups in the cinnamon sugar mixture while still warm, coating them evenly.
- Serve: Serve the Banana French Toast Roll-Ups warm with maple syrup on the side, if desired.
Notes
- For extra flavor, spread a thin layer of peanut butter, Nutella, or cream cheese on the bread before adding the banana slices.
- These roll-ups are best enjoyed immediately for maximum crispness but can be reheated gently in a toaster oven.
- Use whole wheat bread for a healthier variation or white bread for a classic taste.
