Ingredients

Chicken:

  • 4 boneless skinless chicken breasts (about 1 ½ lbs)

Vegetables:

  • 2 cups baby potatoes, halved
  • 2 ears corn, cut into thirds
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced

Other:

  • 1 cup barbecue sauce
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • Chopped fresh parsley for garnish


Instructions

  1. Preheat and Prepare: Preheat the oven to 400°F (200°C) or heat a grill to medium-high. Cut 4 large sheets of heavy-duty foil (about 12×16 inches each).
  2. Toss Vegetables: In a large bowl, toss potatoes, corn, bell pepper, and onion with olive oil, salt, pepper, and smoked paprika.
  3. Assemble Packets: Place a chicken breast in the center of each foil sheet. Brush each with 2–3 tablespoons of barbecue sauce. Divide the seasoned vegetables evenly around the chicken on each foil. Drizzle remaining barbecue sauce over the veggies if desired.
  4. Cook: Fold the foil over the chicken and vegetables to create tightly sealed packets. Bake on a sheet pan or grill for 25–30 minutes, until the chicken reaches 165°F (74°C) and the vegetables are tender.
  5. Serve: Carefully open the packets and garnish with fresh parsley before serving.

Notes
