Description

This Beef Nacho Casserole is a hearty and flavorful Tex-Mex dish combining seasoned ground beef, black beans, corn, and diced tomatoes with green chilies layered with crunchy tortilla chips and melted cheddar cheese. Perfect for a cozy weeknight dinner, it’s topped with sour cream, black olives, green onions, and cilantro for a fresh finish.

Ingredients

Scale

Beef Mixture

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 (10-ounce) can diced tomatoes with green chilies, drained
  • 1 (1-ounce) packet taco seasoning
  • 1/4 cup water

Casserole Layers and Toppings

  • 3 cups tortilla chips, slightly crushed
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup sliced black olives (optional)
  • Chopped green onions, for garnish
  • Fresh cilantro, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Cook Beef and Veggies: In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Add diced onion and minced garlic, and continue cooking for 3–4 minutes until softened.
  3. Add Beans and Seasoning: Stir in black beans, frozen corn, diced tomatoes with green chilies, taco seasoning, and water. Simmer the mixture for 5 minutes, stirring occasionally to combine flavors well.
  4. Layer the Casserole: In a 9×13-inch baking dish, layer half of the crushed tortilla chips, then spoon half of the beef mixture over them, and sprinkle half of the shredded cheddar cheese on top.
  5. Repeat Layers: Repeat with remaining tortilla chips, beef mixture, and cheese layers to build the casserole.
  6. Bake: Bake uncovered in the preheated oven for 15–20 minutes until cheese is melted and bubbly, indicating the casserole is heated through and ready.
  7. Add Toppings and Serve: Let the casserole cool slightly before topping it with sour cream, optional black olives, chopped green onions, and fresh cilantro. Serve warm for the best flavor.

Notes

  • For a spicier version, use hot diced tomatoes with green chilies or add sliced jalapeños to the beef mixture.
  • You can substitute ground turkey or chicken for the ground beef to adjust protein or flavor preferences.
  • Leftovers reheat well in the oven or microwave, making this dish great for meal prep.
  • For a gluten-free version, ensure the tortilla chips and taco seasoning are certified gluten-free.
