Description
A classic Russian dish featuring tender beef strips in a creamy mushroom and onion sauce, typically served over egg noodles or rice.
Ingredients
- 1 lb beef sirloin or tenderloin, thinly sliced
- 2 tbsp olive oil
- 1 tbsp butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 tbsp all-purpose flour
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 cup sour cream
- Salt and pepper to taste
- Cooked egg noodles or rice, for serving
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add beef strips and cook until browned. Remove beef from skillet and set aside.
- In the same skillet, add butter. Sauté onions until translucent, about 3-4 minutes.
- Add garlic and mushrooms, cooking until mushrooms are soft and golden brown.
- Sprinkle flour over the mixture and stir to combine. Cook for 1 minute.
- Gradually add beef broth while stirring, then add Worcestershire sauce. Simmer until the sauce thickens, about 5 minutes.
- Lower heat and stir in sour cream until smooth. Return beef to the skillet and cook until heated through, about 2-3 minutes.
- Season with salt and pepper to taste. Serve over cooked egg noodles or rice, garnished with chopped parsley if desired.
Notes
- Use high-quality beef for the most tender results.
- Don’t boil the sauce after adding sour cream to prevent curdling.
- Can substitute Greek yogurt for sour cream for a lighter version.
