Description

A classic Russian dish featuring tender beef strips in a creamy mushroom and onion sauce, typically served over egg noodles or rice.


Ingredients

  • 1 lb beef sirloin or tenderloin, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 cup sour cream
  • Salt and pepper to taste
  • Cooked egg noodles or rice, for serving
  • Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add beef strips and cook until browned. Remove beef from skillet and set aside.
  2. In the same skillet, add butter. Sauté onions until translucent, about 3-4 minutes.
  3. Add garlic and mushrooms, cooking until mushrooms are soft and golden brown.
  4. Sprinkle flour over the mixture and stir to combine. Cook for 1 minute.
  5. Gradually add beef broth while stirring, then add Worcestershire sauce. Simmer until the sauce thickens, about 5 minutes.
  6. Lower heat and stir in sour cream until smooth. Return beef to the skillet and cook until heated through, about 2-3 minutes.
  7. Season with salt and pepper to taste. Serve over cooked egg noodles or rice, garnished with chopped parsley if desired.

Notes

  • Use high-quality beef for the most tender results.
  • Don’t boil the sauce after adding sour cream to prevent curdling.
  • Can substitute Greek yogurt for sour cream for a lighter version.
