Ingredients

Meat and Vegetables:

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 pound ground beef
  • 1 pound ground pork (or turkey)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced

Spices and Seasonings:

  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)

Canned Goods:

  • 1 (6-ounce) can tomato paste
  • 1 (28-ounce) can crushed tomatoes
  • 1 (15-ounce) can diced tomatoes with green chilies
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed

Liquid:

  • 1 cup beef broth

Instructions

  1. Heat Olive Oil: Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Sauté Onion: Add diced onion and sauté until softened. Stir in garlic.
  3. Cook Meat: Add ground beef and pork, cook until browned.
  4. Add Peppers and Spices: Stir in bell peppers, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne.
  5. Add Tomatoes and Beans: Stir in tomato paste, crushed tomatoes, diced tomatoes with chilies, kidney beans, black beans, and beef broth.
  6. Simmer: Bring to a simmer, then cover and simmer for at least 30 minutes. For best flavor, simmer longer.
