Description
A delicious and cheesy grilled cheese burrito inspired by Taco Bell’s popular menu item. This copycat recipe is packed with beef, rice, cheese, and a creamy chipotle sauce, all wrapped in a grilled tortilla.

- 1 lb ground beef
- 1 packet taco seasoning
- 1/4 cup water
- 1 cup cooked rice
- 1/2 cup nacho cheese sauce
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup sour cream
- 1/4 cup chipotle sauce
- 1/2 cup tortilla strips (optional for crunch)
- 4 large flour tortillas
- 1/2 cup shredded Mexican blend cheese (for grilling)
- 1 tbsp butter or oil (for grilling)
Instructions
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add taco seasoning and 1/4 cup water. Stir and simmer for 5 minutes. Remove from heat.
- Warm the tortillas in the microwave or on a skillet for easy folding.
- Assemble the burritos: In each tortilla, layer rice, seasoned beef, nacho cheese, shredded cheddar, chipotle sauce, sour cream, and tortilla strips if using.
- Roll the tortillas tightly into burritos.
- In a skillet, melt butter or add a bit of oil over medium heat. Sprinkle shredded Mexican cheese directly onto the skillet in the shape of the tortilla.
- Place the burrito seam-side down on the melted cheese. Grill until cheese is golden and crispy. Flip and lightly grill the other side if desired.
- Remove from skillet and serve warm.
Notes
- Use any blend of cheese you prefer for extra meltiness.
- You can substitute chipotle sauce with spicy mayo or your favorite hot sauce.
- Add beans or jalapeños for a spicy twist.
