Ingredients
- 2 lbs ground beef
- 1 cup breadcrumbs
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup milk
- 1/4 cup ketchup
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried parsley
- 1/2 tsp dried thyme
- 1/2 cup ketchup (for topping)
- 2 tbsp brown sugar (for topping)
- 1 tbsp apple cider vinegar (for topping)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, parsley, and thyme. Mix until just combined. Do not overmix.
- Shape the mixture into a loaf and place on the prepared baking sheet or in the loaf pan.
- In a small bowl, mix together the topping ketchup, brown sugar, and apple cider vinegar. Spread evenly over the meatloaf.
- Bake for 55-60 minutes or until the internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing and serving.
Notes
- Use lean ground beef (80/20) for a good balance of flavor and moisture.
- You can substitute breadcrumbs with crushed crackers or oats.
- Leftovers make excellent sandwiches the next day.
