Ingredients

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried parsley
  • 1/2 tsp dried thyme
  • 1/2 cup ketchup (for topping)
  • 2 tbsp brown sugar (for topping)
  • 1 tbsp apple cider vinegar (for topping)


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, parsley, and thyme. Mix until just combined. Do not overmix.
  3. Shape the mixture into a loaf and place on the prepared baking sheet or in the loaf pan.
  4. In a small bowl, mix together the topping ketchup, brown sugar, and apple cider vinegar. Spread evenly over the meatloaf.
  5. Bake for 55-60 minutes or until the internal temperature reaches 160°F (71°C).
  6. Let rest for 10 minutes before slicing and serving.

  • Use lean ground beef (80/20) for a good balance of flavor and moisture.
  • You can substitute breadcrumbs with crushed crackers or oats.
