- 6 cups Rice Krispies cereal
- 1/2 cup (1 stick) unsalted butter
- 1 (10 oz) bag mini marshmallows (about 5 1/2 cups)
- 2 cups additional mini marshmallows (for extra gooeyness)
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Grease a 9×13-inch baking dish with butter or nonstick spray.
- In a large pot over medium-low heat, melt the butter.
- Add the 10 oz bag of marshmallows and salt, stirring constantly until melted and smooth.
- Remove from heat and stir in vanilla extract.
- Quickly fold in the Rice Krispies cereal and the 2 cups of additional mini marshmallows until evenly coated.
- Press the mixture gently into the prepared pan using a buttered spatula or parchment paper. Don’t compact too tightly or the treats will be too dense.
- Let cool for at least 30 minutes, then cut into squares and serve.
