Ingredients

For the Stir Fry:

  • 14 ounces fresh udon noodles (or frozen, thawed)
  • 1 tablespoon vegetable oil
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 cup snap peas or broccoli florets
  • 2 green onions, cut into 2-inch pieces
  • Optional protein like sliced beef, chicken, or tofu

For the Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon water
  • 1 teaspoon freshly ground black pepper
  • ½ teaspoon sugar

Instructions

  1. Rinse Udon Noodles: If using packaged udon noodles, rinse with hot water to loosen and separate them, then drain well.
  2. Prepare Sauce: In a small bowl, mix together soy sauce, oyster sauce, dark soy sauce, water, black pepper, and sugar.
  3. Stir Fry: Heat oil in a large skillet or wok over medium-high heat. Add onion and cook for 2–3 minutes, then stir in garlic, bell pepper, and snap peas. Cook until vegetables are tender-crisp, about 3–4 minutes. Add the noodles and pour the sauce over the top. Stir-fry everything together for 2–3 minutes until noodles are heated through and well coated. Toss in green onions and optional protein if using. Cook for 1 more minute, then serve hot.
