Ingredients
For the Stir Fry:
- 14 ounces fresh udon noodles (or frozen, thawed)
- 1 tablespoon vegetable oil
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup snap peas or broccoli florets
- 2 green onions, cut into 2-inch pieces
- Optional protein like sliced beef, chicken, or tofu
For the Sauce:
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon water
- 1 teaspoon freshly ground black pepper
- ½ teaspoon sugar
Instructions
- Rinse Udon Noodles: If using packaged udon noodles, rinse with hot water to loosen and separate them, then drain well.
- Prepare Sauce: In a small bowl, mix together soy sauce, oyster sauce, dark soy sauce, water, black pepper, and sugar.
- Stir Fry: Heat oil in a large skillet or wok over medium-high heat. Add onion and cook for 2–3 minutes, then stir in garlic, bell pepper, and snap peas. Cook until vegetables are tender-crisp, about 3–4 minutes. Add the noodles and pour the sauce over the top. Stir-fry everything together for 2–3 minutes until noodles are heated through and well coated. Toss in green onions and optional protein if using. Cook for 1 more minute, then serve hot.
Notes
- Use freshly ground coarse black pepper for bold flavor.
- Feel free to substitute vegetables based on what you have on hand.
