Description

A savory breakfast casserole layered with bread, eggs, cheese, and vegetables or meat, perfect for make-ahead brunches or holiday mornings.


Ingredients

  • 6 cups cubed day-old bread
  • 8 large eggs
  • 2 cups whole milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup chopped spinach (fresh or frozen, thawed and drained)
  • 1 cup diced cooked ham or cooked sausage (optional)
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • Butter or non-stick spray for greasing

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Layer the cubed bread evenly in the baking dish.
  3. In a skillet over medium heat, sauté onion and bell pepper until softened. Add spinach and cooked meat (if using), then remove from heat.
  4. Spread the vegetable and meat mixture evenly over the bread cubes.
  5. Sprinkle cheddar and Parmesan cheese over the top.
  6. In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder until well combined.
  7. Pour the egg mixture evenly over the layered ingredients in the dish. Press down lightly to ensure all bread is soaked.
  8. Cover with foil and refrigerate for at least 1 hour or overnight for best results.
  9. When ready to bake, uncover and place in the preheated oven. Bake for 45-55 minutes or until the top is golden brown and the center is set.
  10. Let it rest for 10 minutes before slicing and serving.

Notes

  • You can customize with any vegetables or cheese you like.
  • To make it vegetarian, omit the meat.
