- 6 cups cubed day-old bread
- 8 large eggs
- 2 cups whole milk
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup chopped spinach (fresh or frozen, thawed and drained)
- 1 cup diced cooked ham or cooked sausage (optional)
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- Butter or non-stick spray for greasing
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
- Layer the cubed bread evenly in the baking dish.
- In a skillet over medium heat, sauté onion and bell pepper until softened. Add spinach and cooked meat (if using), then remove from heat.
- Spread the vegetable and meat mixture evenly over the bread cubes.
- Sprinkle cheddar and Parmesan cheese over the top.
- In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder until well combined.
- Pour the egg mixture evenly over the layered ingredients in the dish. Press down lightly to ensure all bread is soaked.
- Cover with foil and refrigerate for at least 1 hour or overnight for best results.
- When ready to bake, uncover and place in the preheated oven. Bake for 45-55 minutes or until the top is golden brown and the center is set.
- Let it rest for 10 minutes before slicing and serving.
Notes
- You can customize with any vegetables or cheese you like.
- To make it vegetarian, omit the meat.
- Great for prepping the night before a busy morning.
