Description

These breakfast tacos are a quick, delicious way to start your day, filled with scrambled eggs, crispy bacon, cheese, and fresh toppings.


Ingredients

  • 4 large eggs
  • 4 small flour or corn tortillas
  • 1/4 cup milk
  • 4 strips bacon
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup diced onions
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced
  • Salt and pepper to taste
  • Hot sauce (optional)


Instructions

  1. In a bowl, whisk the eggs with milk, salt, and pepper.
  2. Cook the bacon in a skillet over medium heat until crispy, then set aside on paper towels.
  3. In the same skillet, scramble the egg mixture until cooked through, then remove from heat.
  4. Warm the tortillas in a separate pan or microwave.
  5. Assemble the tacos by dividing the scrambled eggs among the tortillas.
  6. Crumble bacon over the eggs, then top with cheese, tomatoes, onions, cilantro, and avocado slices.
  7. Drizzle with hot sauce if desired and serve immediately.
