Description

Soft and chewy cookies made from a box cake mix—quick, easy, and endlessly customizable.


Ingredients

  • 1 (15.25 oz) box cake mix (any flavor)
  • 2 large eggs
  • 1/2 cup vegetable oil
  • Optional mix-ins: 1/2 cup chocolate chips, nuts, sprinkles, or candy pieces

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together cake mix, eggs, and oil until a soft dough forms.
  3. Fold in any desired mix-ins.
  4. Use a cookie scoop or tablespoon to scoop dough onto prepared sheet, spacing 2 inches apart.
  5. Bake for 8–12 minutes, until edges are set and tops are slightly cracked.
  6. Allow to cool on the pan for 2 minutes before transferring to a wire rack to finish cooling.

Notes

  • For firmer cookies, chill the dough for 30 minutes before baking.
  • Add a teaspoon of vanilla extract for extra flavor.
  • Roll dough balls in sugar or cinnamon sugar before baking for a sweet crust.
