- 2 pounds flank or skirt steak
- 1/3 cup olive oil
- 1/4 cup soy sauce
- 1/4 cup lime juice (about 2 limes)
- 2 tablespoons white vinegar
- 4 cloves garlic, minced
- 1 jalapeño, minced
- 1/2 cup chopped cilantro
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon paprika
Instructions
- In a large bowl, whisk together olive oil, soy sauce, lime juice, vinegar, garlic, jalapeño, cilantro, cumin, chili powder, black pepper, salt, and paprika to make the marinade.
- Place the steak in a large resealable bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 2 hours or overnight for best results.
- Preheat grill to high heat. Remove the steak from the marinade and let excess drip off.
- Grill the steak for 6-8 minutes per side, depending on thickness and desired doneness.
- Remove from grill and let rest for 5-10 minutes. Slice thinly against the grain and serve.

- Marinate the meat overnight for maximum flavor.
- Let the steak rest before slicing to retain juices.
- Use skirt steak for a more traditional taste.
