Description

A light, crunchy, and refreshing celery salad that makes a perfect side dish or a healthy snack.


Ingredients

  • 6 celery stalks, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup shaved Parmesan cheese (optional)
  • 2 tablespoons chopped walnuts or almonds (optional)

Instructions

  1. Wash and thinly slice the celery stalks.
  2. In a large bowl, combine the sliced celery and chopped parsley.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the celery mixture and toss well to combine.
  5. If using, add shaved Parmesan and nuts on top before serving.
