Description
A light, crunchy, and refreshing celery salad that makes a perfect side dish or a healthy snack.
Ingredients
- 6 celery stalks, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup shaved Parmesan cheese (optional)
- 2 tablespoons chopped walnuts or almonds (optional)
Instructions
- Wash and thinly slice the celery stalks.
- In a large bowl, combine the sliced celery and chopped parsley.
- In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
- Pour the dressing over the celery mixture and toss well to combine.
- If using, add shaved Parmesan and nuts on top before serving.
Notes
- You can substitute parsley with fresh dill or mint for a different flavor.
- Let the salad sit for 10 minutes before serving to allow flavors to meld.
- Use vegan Parmesan or omit cheese for a vegan version.
