Description
Cheese blintzes are thin crepes filled with a sweetened cheese mixture, folded and pan-fried until golden and served warm, often topped with fruit or sour cream.
Ingredients
- 4 large eggs
- 1 cup all-purpose flour
- 1 cup milk
- 1/4 tsp salt
- 1 tbsp sugar
- 2 tbsp melted butter
- 1 tsp vanilla extract
- 1 cup ricotta cheese
- 1/2 cup cream cheese, softened
- 1/4 cup sugar
- 1 tsp lemon zest
- 1 tsp vanilla extract (for filling)
- Butter or oil for frying
Instructions
- In a blender, combine eggs, flour, milk, salt, sugar, melted butter, and vanilla extract. Blend until smooth and let the batter rest for 30 minutes.
- Heat a non-stick skillet over medium heat. Lightly grease the pan and pour in about 1/4 cup of batter, swirling to coat the bottom of the pan. Cook for about 1 minute or until the edges lift. Flip and cook for another 10 seconds. Remove and set aside. Repeat with remaining batter.
- In a bowl, mix ricotta cheese, cream cheese, sugar, lemon zest, and vanilla extract until smooth.
- Place a crepe on a flat surface, spoon 2-3 tablespoons of filling near one end. Fold in the sides and roll up like a burrito.
- Heat a skillet with butter or oil over medium heat. Fry the blintzes seam-side down until golden brown and crisp, about 2-3 minutes per side.
- Serve warm with fruit preserves, sour cream, or powdered sugar if desired.
Notes
- Crepes can be made in advance and refrigerated or frozen.
- Filling can be customized with farmer’s cheese or mascarpone.
- Serve with fresh berries or a fruit compote for added flavor.
