Description

A deliciously cheesy and creamy broccoli pasta that’s quick to prepare and perfect for a comforting weeknight meal.


Ingredients

  • 8 oz (225g) pasta of your choice
  • 2 cups broccoli florets
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup reserved pasta water

Instructions

  1. Cook the pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
  2. During the last 2-3 minutes of cooking the pasta, add the broccoli florets to the boiling water with the pasta to cook until tender.
  3. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Pour in the heavy cream and bring to a simmer.
  5. Stir in the cheddar cheese and Parmesan cheese until melted and smooth.
  6. Season with salt, pepper, and red pepper flakes if using.
  7. Add the drained pasta and broccoli to the skillet and toss to coat in the sauce. Add reserved pasta water as needed to reach desired consistency.
  8. Cook for another 1-2 minutes until everything is heated through and well combined.
  9. Serve hot, optionally garnished with extra Parmesan or red pepper flakes.

Notes

  • Use whole wheat or gluten-free pasta for a healthier option.
  • You can substitute broccoli with cauliflower or peas.
  • Add grilled chicken or mushrooms for extra protein.
