Description

Delicious cherry pie-inspired bars with a buttery crust, juicy cherry filling, and optional icing drizzle.


Ingredients

  • 12 Tbsp (¾ cup) butter, softened
  • 1 cup brown sugar
  • 3 eggs
  • ¼ tsp almond extract
  • 1½ tsp vanilla extract, divided
  • 2 cups Kodiak Buttermilk Power Cakes mix
  • 3 cups frozen cherries, halved
  • 2 Tbsp cornstarch
  • Juice of ½ lemon
  • ¼ cup maple syrup
  • 1 cup powdered sugar
  • ¼ tsp vanilla extract
  • 2–3 Tbsp water


Instructions

  1. Preheat oven to 350 °F (175 °C). Line a 9×13″ pan with parchment.
  2. Beat butter and brown sugar until light and fluffy.
  3. Add eggs one at a time, then almond and half the vanilla.
  4. Beat in Kodiak mix until combined; let rest 5 min.
  5. Press ⅔ of dough into pan and bake 15 min.
  6. Meanwhile, cook cherries, cornstarch, lemon juice, and maple syrup over medium-high until thickened (3–5 min).
  7. Pour cherry filling over crust.
  8. Dot remaining dough over cherries evenly.
  9. Bake another 15–20 min until top is golden.
  10. Let cool.
  11. Whisk powdered sugar, vanilla, and water into icing; drizzle over cooled bars.
  12. Cut into 15 bars and store airtight.

Notes

  • You can use fresh or frozen cherries.
  • Bars keep a few days in airtight container.
  • Letting them chill helps them set before slicing.
