Description
A delicious twist on the classic Chicken Cordon Bleu, this meatloaf combines ground chicken, ham, and Swiss cheese for a comforting and satisfying main dish.

- 2 lbs ground chicken
- 1 cup breadcrumbs
- 2 large eggs
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp Dijon mustard
- 6 oz sliced ham, chopped
- 6 oz Swiss cheese, shredded or sliced
- 2 tbsp parsley, chopped (optional)
Instructions
- Preheat the oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
- In a large bowl, combine ground chicken, breadcrumbs, eggs, milk, salt, pepper, garlic powder, onion powder, and Dijon mustard. Mix until well combined.
- On a piece of parchment or plastic wrap, flatten the chicken mixture into a rectangle about 1/2 inch thick.
- Layer the chopped ham and Swiss cheese evenly over the surface of the meat mixture.
- Carefully roll the mixture into a loaf, jelly-roll style, using the parchment or plastic wrap to help lift and shape.
- Transfer the loaf to the prepared pan and bake for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before slicing. Garnish with parsley if desired.
Notes
- You can substitute turkey for chicken if desired.
- Use low-fat cheese and ham to reduce calories.
- Pairs well with mashed potatoes or steamed vegetables.
