Description

A flavorful and cheesy Chicken Fajita Casserole made with tender chicken, bell peppers, onions, and Mexican spices, baked to perfection for a comforting family dinner.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and sauté bell peppers and onions until soft, about 5-7 minutes.
  3. In a large bowl, combine cooked chicken, sautéed vegetables, chili powder, cumin, garlic powder, paprika, salt, and black pepper.
  4. Stir in sour cream and half of both cheeses until well combined.
  5. Transfer the mixture to a greased 9×13 inch baking dish.
  6. Sprinkle remaining cheese over the top.
  7. Bake uncovered for 20-25 minutes or until cheese is bubbly and golden.
  8. Garnish with chopped cilantro if desired and serve warm.

Notes

  • You can use rotisserie chicken to save time.
  • Feel free to add jalapeños for extra spice.
  • Serve with rice, tortillas, or a side salad.
