- 2 cups cooked chicken, shredded
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat and sauté bell peppers and onions until soft, about 5-7 minutes.
- In a large bowl, combine cooked chicken, sautéed vegetables, chili powder, cumin, garlic powder, paprika, salt, and black pepper.
- Stir in sour cream and half of both cheeses until well combined.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Sprinkle remaining cheese over the top.
- Bake uncovered for 20-25 minutes or until cheese is bubbly and golden.
- Garnish with chopped cilantro if desired and serve warm.
Notes
- You can use rotisserie chicken to save time.
- Feel free to add jalapeños for extra spice.
- Serve with rice, tortillas, or a side salad.
