Description
Juicy and flavorful grilled chicken kabobs marinated in a blend of spices and grilled to perfection with vegetables.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red onion, cut into chunks
- 1 zucchini, sliced
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- Wooden or metal skewers
Instructions
- In a large bowl, mix olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper.
- Add chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour.
- If using wooden skewers, soak them in water for 30 minutes.
- Preheat the grill to medium-high heat.
- Thread chicken, bell peppers, onion, and zucchini alternately onto the skewers.
- Grill kabobs for 10–12 minutes, turning occasionally, until chicken is fully cooked and has a nice char.
- Remove from grill and let rest for a few minutes before serving.
Notes
- You can substitute chicken with turkey or tofu for variation.
- Serve with rice, flatbread, or a fresh salad.
- Marinate overnight for extra flavor.
