Description

Juicy and flavorful grilled chicken kabobs marinated in a blend of spices and grilled to perfection with vegetables.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Wooden or metal skewers


Instructions

  1. In a large bowl, mix olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper.
  2. Add chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour.
  3. If using wooden skewers, soak them in water for 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Thread chicken, bell peppers, onion, and zucchini alternately onto the skewers.
  6. Grill kabobs for 10–12 minutes, turning occasionally, until chicken is fully cooked and has a nice char.
  7. Remove from grill and let rest for a few minutes before serving.

Notes

  • You can substitute chicken with turkey or tofu for variation.
  • Serve with rice, flatbread, or a fresh salad.
  • Marinate overnight for extra flavor.
