Scale
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1 cup uncooked pasta (penne or rigatoni work well)
- 1 1/2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season the chicken pieces with garlic powder, onion powder, oregano, basil, red pepper flakes (if using), salt, and pepper.
- Add the chicken to the skillet and cook for 6-8 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the uncooked pasta and pour in 1 1/2 cups of water. Bring to a boil, then reduce the heat and simmer, stirring occasionally, for about 8-10 minutes, or until the pasta is al dente and most of the liquid is absorbed.
- Return the chicken to the skillet and pour in the marinara sauce. Stir to combine and simmer for another 2-3 minutes to heat through.
- Sprinkle the shredded mozzarella cheese and Parmesan cheese over the pasta and chicken mixture. Cover the skillet and cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil or parsley if desired, and serve hot.
Notes
- You can use any short pasta shape like rigatoni, penne, or rotini for this dish.
- For extra crunch, coat the chicken pieces in breadcrumbs before frying for a more traditional Chicken Parmesan texture.
- This skillet dish is perfect for serving with a side of garlic bread or a simple salad.
