Ingredients
Main Ingredients:
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon grated fresh ginger
- 1 tablespoon curry powder
- 1 teaspoon ground coriander
- 1/2 teaspoon chili flakes (optional)
- 1 pound boneless skinless chicken thighs, cut into bite-size pieces
Sauce:
- 1/2 cup natural peanut butter
- 1 can (14 oz) coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- Salt to taste
Garnish:
- Chopped peanuts
- Fresh cilantro
Instructions
- Sauté Aromatics: Heat oil in a skillet, sauté onion until soft. Add garlic, ginger, spices, and chili flakes.
- Cook Chicken: Add chicken, cook until browned.
- Make Sauce: Stir in peanut butter, coconut milk, soy sauce, and brown sugar. Simmer.
- Finish Dish: Add lime juice, season with salt. Serve over rice, garnished with peanuts and cilantro.
Notes
- You can use chicken breast instead of thighs.
- For a lighter version, use light coconut milk.
- Add steamed broccoli or green beans for extra veggies.
