Juicy chicken marinated in smoky chipotle peppers and spices, then grilled or pan-seared for a flavorful main dish.
Ingredients
- 1 lb boneless skinless chicken thighs
- Kosher salt, to taste
- Black pepper, to taste
- 6 oz chopped chipotle peppers in adobo
- 1 Tbsp cooking oil (vegetable or olive)
Instructions
- Season the chicken all over with salt and pepper.
- Combine chicken and chopped chipotles in a zip‑top bag; mix to coat. Marinate at least 2 hours or up to overnight in the fridge.
- Heat oil over medium‑high. Add chicken; cook 4 minutes per side until golden.
- Remove chicken to rest 5 minutes; slice into bite‑sized pieces.
- Return chicken to pan; cook 2–3 minutes more until browned. Serve warm.
Notes
- Marinate longer (up to overnight) for deeper flavor.
- Use chicken breasts if preferred, but adjust cook time.
- Serve in bowls with rice, beans, salsa, guacamole, etc.
- Store leftovers up to 4 days or freeze for future bowls.
