Description

Juicy chicken marinated in smoky chipotle peppers and spices, then grilled or pan-seared for a flavorful main dish.


Ingredients

  • 1 lb boneless skinless chicken thighs
  • Kosher salt, to taste
  • Black pepper, to taste
  • 6 oz chopped chipotle peppers in adobo
  • 1 Tbsp cooking oil (vegetable or olive)


Instructions

  1. Season the chicken all over with salt and pepper.
  2. Combine chicken and chopped chipotles in a zip‑top bag; mix to coat. Marinate at least 2 hours or up to overnight in the fridge.
  3. Heat oil over medium‑high. Add chicken; cook 4 minutes per side until golden.
  4. Remove chicken to rest 5 minutes; slice into bite‑sized pieces.
  5. Return chicken to pan; cook 2–3 minutes more until browned. Serve warm.

Notes

  • Marinate longer (up to overnight) for deeper flavor.
  • Use chicken breasts if preferred, but adjust cook time.
  • Serve in bowls with rice, beans, salsa, guacamole, etc.
  • Store leftovers up to 4 days or freeze for future bowls.
