Description

A flavorful and satisfying burrito filled with grilled chicken tossed in chipotle ranch sauce, rice, beans, cheese, and fresh veggies.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1/2 cup chipotle ranch dressing
  • 4 large flour tortillas
  • 1 cup cooked white or brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded lettuce
  • 1/4 cup diced red onion
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat grill or grill pan over medium-high heat.
  2. Rub chicken breasts with olive oil, salt, and pepper.
  3. Grill chicken for 6–7 minutes per side, or until fully cooked. Remove and let rest for 5 minutes, then slice into strips.
  4. Toss sliced chicken in chipotle ranch dressing until well coated.
  5. Warm tortillas in a skillet or microwave until pliable.
  6. Assemble burritos by layering rice, black beans, chicken, cheese, tomatoes, lettuce, and red onion in the center of each tortilla.
  7. Fold the sides and roll tightly into a burrito.
  8. Optional: grill the burritos seam-side down for 1–2 minutes to seal and crisp the exterior.
  9. Serve immediately with extra chipotle ranch if desired.

Notes

  • You can substitute grilled tofu for a vegetarian version.
  • Use whole wheat tortillas for added fiber.
  • Add avocado or sour cream for extra richness.
