Description

Delicious and indulgent chocolate peanut butter cookie sandwiches, perfect for satisfying any sweet craving with a creamy peanut butter filling between two chewy chocolate cookies.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened (for filling)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 23 tablespoons milk (for filling consistency)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, whisk together flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Fold in chocolate chips.
  7. Drop tablespoon-sized dough balls onto prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10–12 minutes or until edges are set. Let cookies cool on a wire rack.
  9. Meanwhile, make the peanut butter filling by beating together peanut butter, softened butter, powdered sugar, vanilla extract, and enough milk to reach a spreadable consistency.
  10. Once cookies are cool, spread a generous amount of filling on the flat side of one cookie and top with another to make a sandwich.

Notes

  • Store in an airtight container at room temperature for up to 3 days.
  • For a firmer filling, refrigerate the cookie sandwiches for 30 minutes before serving.
  • Use crunchy peanut butter for added texture if preferred.
