Churro Cupcakes combine the cinnamon-sugar flavor of traditional churros with the soft, fluffy texture of cupcakes, topped with creamy cinnamon frosting for a festive treat.

- 1/4 tsp salt

- 1/2 cup whole milk
- 1/4 cup sour cream

- 2 cups powdered sugar

- 1/2 tsp vanilla extract (for frosting)
Instructions
- Preheat oven to 350°F (175°C) and line a cupcake tin with liners.
- In a bowl, whisk together flour, baking powder, salt, and cinnamon.
- In a separate bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- Add the dry ingredients in batches, alternating with milk and sour cream, beginning and ending with dry ingredients.
- Divide batter evenly among cupcake liners and bake for 18–20 minutes or until a toothpick comes out clean.
- Allow cupcakes to cool for 5 minutes. Brush tops with melted butter, then dip into a cinnamon-sugar mixture (1/2 cup sugar + 1 tsp cinnamon).
- For frosting, beat softened butter until creamy. Add powdered sugar, cinnamon, milk, and vanilla; beat until fluffy.
- Pipe frosting onto cooled cupcakes and optionally sprinkle with extra cinnamon sugar or top with mini churros.
Notes
- Ensure cupcakes are completely cool before frosting.
- Store in an airtight container at room temperature for up to 2 days or refrigerated for up to 5 days.
- Mini churros make a fun decorative topping.
