These Cilantro Lime Grilled Shrimp are bursting with fresh, zesty flavors and are perfect for a quick and delicious meal. Marinated in a flavorful mixture of cilantro, lime, and spices, these shrimp are grilled to perfection, making them a fantastic dish for any occasion.

Ingredients

Shrimp:

  • 1 pound large shrimp, peeled and deveined

Marinade:

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 tablespoons chopped fresh cilantro
  • 2 garlic cloves, minced
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Serving:

  • Lime wedges
  • Extra cilantro for serving

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together olive oil, lime juice, lime zest, cilantro, garlic, cumin, salt, and black pepper.
  2. Marinate the Shrimp: Add the shrimp to the marinade, toss to coat evenly. Cover and refrigerate for 20–30 minutes.
  3. Grill the Shrimp: Preheat grill or grill pan to medium-high heat. Thread shrimp onto skewers if using. Grill for 2–3 minutes per side until pink, opaque, and lightly charred.
  4. Serve: Remove from the grill and serve immediately with lime wedges and fresh cilantro.

Notes

  • For indoor cooking, use a cast iron skillet or grill pan.
  • Delicious served over rice, in tacos, or on a salad.
  • If using wooden skewers, soak them in water for 20 minutes to prevent burning.
