Description

These Cinnamon Streusel French Toast Cups are a fun twist on traditional French toast! Made with soft bread cubes, cozy cinnamon, and a buttery brown sugar topping, they’re baked in muffin tins for a grab-and-go breakfast treat. Perfect for holidays, brunches, or just a sweet weekend morning.

Ingredients

For the French Toast Cups:

  • 5 cups cubed bread (like French or brioche)
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons maple syrup
  • Pinch of salt
  • Butter or non-stick spray (for greasing muffin tin)

For the Streusel Topping:

  • 1/4 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons cold butter, cut into small cubes

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin with butter or non-stick spray.
  2. Mix the wet ingredients: In a large bowl, whisk together eggs, milk, vanilla, cinnamon, maple syrup, and a pinch of salt.
  3. Add bread: Gently fold in the bread cubes until fully coated. Let the mixture sit for 5–10 minutes to soak.
  4. Scoop into muffin tin: Divide the mixture evenly into the muffin cups, pressing down slightly to fit.
  5. Make the streusel: In a small bowl, combine brown sugar, flour, and cinnamon. Cut in the butter using a fork or your fingers until the mixture forms crumbs.
  6. Top and bake: Sprinkle the streusel over each French toast cup. Bake for 25–30 minutes, or until golden brown and set.
  7. Cool and serve: Let cool for a few minutes in the pan before removing. Serve warm, optionally topped with more maple syrup or a dusting of powdered sugar.

Notes

  • You can use day-old bread for better texture.
  • These freeze well! Just reheat in the microwave or toaster oven.
  • Great topped with fresh berries or a drizzle of glaze.
