Ingredients
For the French Toast Cups:
- 5 cups cubed bread (like French or brioche)
- 4 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 2 tablespoons maple syrup
- Pinch of salt
- Butter or non-stick spray (for greasing muffin tin)
For the Streusel Topping:
- 1/4 cup brown sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon ground cinnamon
- 2 tablespoons cold butter, cut into small cubes
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin with butter or non-stick spray.
- Mix the wet ingredients: In a large bowl, whisk together eggs, milk, vanilla, cinnamon, maple syrup, and a pinch of salt.
- Add bread: Gently fold in the bread cubes until fully coated. Let the mixture sit for 5–10 minutes to soak.
- Scoop into muffin tin: Divide the mixture evenly into the muffin cups, pressing down slightly to fit.
- Make the streusel: In a small bowl, combine brown sugar, flour, and cinnamon. Cut in the butter using a fork or your fingers until the mixture forms crumbs.
- Top and bake: Sprinkle the streusel over each French toast cup. Bake for 25–30 minutes, or until golden brown and set.
- Cool and serve: Let cool for a few minutes in the pan before removing. Serve warm, optionally topped with more maple syrup or a dusting of powdered sugar.
