Description

A sweet and crunchy snack made by coating popcorn in a delicious cookie butter glaze. Perfect for movie nights or as a treat for any occasion.

Ingredients

  • 8 cups popped popcorn
  • 1/2 cup cookie butter (such as Biscoff)
  • 1/4 cup light corn syrup
  • 1/4 cup brown sugar
  • 2 tbsp butter
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. Place the popped popcorn in a large mixing bowl and set aside.
  3. In a saucepan over medium heat, combine the cookie butter, corn syrup, brown sugar, butter, and salt. Stir continuously until the mixture is smooth and begins to bubble.
  4. Remove the saucepan from heat and stir in the vanilla extract.
  5. Pour the cookie butter mixture over the popcorn and gently stir to coat all pieces evenly.
  6. Spread the coated popcorn evenly onto the prepared baking sheet.
  7. Bake for 30 minutes, stirring every 10 minutes to ensure even coating and crispness.
  8. Remove from oven and let cool completely before serving or storing.

Notes

  • Store in an airtight container for up to 1 week.
  • You can drizzle melted chocolate over the cooled popcorn for extra flavor.
  • Use freshly popped popcorn with minimal oil or butter for best results.
