Ingredients
- 8 cups popped popcorn
- 1/2 cup cookie butter (such as Biscoff)
- 1/4 cup light corn syrup
- 1/4 cup brown sugar
- 2 tbsp butter
- 1/4 tsp salt
- 1/4 tsp vanilla extract
Instructions
- Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.
- Place the popped popcorn in a large mixing bowl and set aside.
- In a saucepan over medium heat, combine the cookie butter, corn syrup, brown sugar, butter, and salt. Stir continuously until the mixture is smooth and begins to bubble.
- Remove the saucepan from heat and stir in the vanilla extract.
- Pour the cookie butter mixture over the popcorn and gently stir to coat all pieces evenly.
- Spread the coated popcorn evenly onto the prepared baking sheet.
- Bake for 30 minutes, stirring every 10 minutes to ensure even coating and crispness.
- Remove from oven and let cool completely before serving or storing.

- Store in an airtight container for up to 1 week.
- You can drizzle melted chocolate over the cooled popcorn for extra flavor.
- Use freshly popped popcorn with minimal oil or butter for best results.
