Description

This Corn Salsa is a fresh, zesty, and slightly spicy Chipotle copycat that’s perfect as a dip or topping for burritos, tacos, or salads.


Ingredients

  • 2 cups frozen or fresh corn kernels (thawed if frozen)
  • 1/2 cup red onion, finely diced
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup fresh lemon juice (about 1 lemon)
  • 1/2 teaspoon salt

Instructions

  1. In a large bowl, combine the corn, red onion, and jalapeño.
  2. Add the chopped cilantro and stir to mix.
  3. Pour in the lime and lemon juice.
  4. Season with salt and stir until well combined.
  5. Let the salsa sit for at least 15 minutes to allow the flavors to meld.
  6. Serve chilled or at room temperature as a dip or topping.

Notes

  • You can use grilled or roasted corn for a smokier flavor.
  • Adjust the jalapeño to taste for more or less heat.
  • Best served the same day but can be stored in the refrigerator for up to 3 days.
