This Corn Salsa is a fresh, zesty, and slightly spicy Chipotle copycat that’s perfect as a dip or topping for burritos, tacos, or salads.

- 2 cups frozen or fresh corn kernels (thawed if frozen)
- 1/2 cup red onion, finely diced
- 1 jalapeño pepper, seeded and finely chopped
- 1/2 cup fresh cilantro, chopped
- 1/4 cup fresh lime juice (about 2 limes)
- 1/4 cup fresh lemon juice (about 1 lemon)
- 1/2 teaspoon salt
Instructions
- In a large bowl, combine the corn, red onion, and jalapeño.
- Add the chopped cilantro and stir to mix.
- Pour in the lime and lemon juice.
- Season with salt and stir until well combined.
- Let the salsa sit for at least 15 minutes to allow the flavors to meld.
- Serve chilled or at room temperature as a dip or topping.
Notes
- You can use grilled or roasted corn for a smokier flavor.
- Adjust the jalapeño to taste for more or less heat.
- Best served the same day but can be stored in the refrigerator for up to 3 days.
