- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 4 cups fresh spinach
- Salt and pepper, to taste
- 1/4 cup chicken broth (optional, for thinning sauce)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook for 5-7 minutes on each side, or until golden and cooked through. Remove and set aside.
- In the same skillet, melt butter and sauté minced garlic for 1 minute until fragrant.
- Add heavy cream, Parmesan cheese, and Italian seasoning. Stir until the cheese is melted and the sauce is smooth.
- Add fresh spinach to the sauce and cook for 2-3 minutes until wilted.
- Return the chicken to the skillet and simmer for another 2-3 minutes, spooning sauce over the top.
- Serve warm, optionally with pasta or rice.
Notes
- Use chicken thighs instead of breasts for more flavor and tenderness.
- Add a splash of chicken broth if the sauce is too thick.
- Great served over pasta, rice, or mashed potatoes.
