- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts, sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- 12 oz fettuccine or pasta of choice
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook until browned and cooked through, about 5-6 minutes. Remove from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Sprinkle in the flour and whisk continuously for 1-2 minutes to form a roux.
- Gradually pour in the milk and heavy cream, whisking to combine. Bring to a simmer and cook for 3-5 minutes until thickened.
- Stir in the Parmesan cheese and Italian seasoning until smooth and creamy.
- Return the cooked chicken to the skillet and stir to coat with the sauce.
- Add the cooked pasta and toss everything together until well combined.
- Garnish with fresh parsley and serve hot.
Notes
- You can substitute half-and-half for the heavy cream for a lighter version.
- Add steamed broccoli or spinach for extra veggies.
- Use freshly grated Parmesan for best flavor and texture.
