Ingredients
For the Casserole:
- 1 cup uncooked quinoa
- 2 cups low-sodium chicken broth or water
- 2 cups cooked, shredded chicken breast
- 2 cups broccoli florets (lightly steamed)
- 1 tablespoon olive oil
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 cup plain Greek yogurt
- ½ cup sour cream
- 1 cup shredded sharp cheddar cheese
- ½ teaspoon dried thyme
- ½ teaspoon paprika
- Salt and pepper to taste
For Topping:
- ¼ cup grated Parmesan cheese
- ¼ cup whole wheat breadcrumbs (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F.
- Cook Quinoa: Rinse the quinoa and cook in chicken broth or water according to package instructions; set aside.
- Sauté Onion and Garlic: In a skillet, sauté onion and garlic in olive oil until softened.
- Combine Ingredients: In a bowl, mix cooked quinoa, chicken, broccoli, sautéed onion and garlic, Greek yogurt, sour cream, cheddar cheese, thyme, paprika, salt, and pepper.
- Transfer to Baking Dish: Place the mixture in a greased 9×13-inch baking dish.
- Add Toppings: Top with Parmesan and breadcrumbs if desired.
- Bake: Bake for 20–25 minutes until hot and bubbly with a golden brown top.
- Serve: Let cool for 5 minutes before serving.
Notes
- You can substitute sour cream with more Greek yogurt for a lighter version.
- Add cooked mushrooms or peas for extra veggies.
