Description

Ingredients

For the Casserole:

  • 1 cup uncooked quinoa
  • 2 cups low-sodium chicken broth or water
  • 2 cups cooked, shredded chicken breast
  • 2 cups broccoli florets (lightly steamed)
  • 1 tablespoon olive oil
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup plain Greek yogurt
  • ½ cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika
  • Salt and pepper to taste

For Topping:

  • ¼ cup grated Parmesan cheese
  • ¼ cup whole wheat breadcrumbs (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Cook Quinoa: Rinse the quinoa and cook in chicken broth or water according to package instructions; set aside.
  3. Sauté Onion and Garlic: In a skillet, sauté onion and garlic in olive oil until softened.
  4. Combine Ingredients: In a bowl, mix cooked quinoa, chicken, broccoli, sautéed onion and garlic, Greek yogurt, sour cream, cheddar cheese, thyme, paprika, salt, and pepper.
  5. Transfer to Baking Dish: Place the mixture in a greased 9×13-inch baking dish.
  6. Add Toppings: Top with Parmesan and breadcrumbs if desired.
  7. Bake: Bake for 20–25 minutes until hot and bubbly with a golden brown top.
  8. Serve: Let cool for 5 minutes before serving.

Notes

  • You can substitute sour cream with more Greek yogurt for a lighter version.
  • Add cooked mushrooms or peas for extra veggies.
