Description

A comforting one-skillet meal featuring tender chicken, soft gnocchi, and a creamy garlic parmesan sauce. Perfect for a quick weeknight dinner.


Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 (16 oz) package potato gnocchi
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup baby spinach (optional)
  • 2 tbsp butter
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced chicken, season with salt, pepper, and Italian seasoning, and cook until browned and cooked through. Remove from skillet and set aside.
  3. In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
  4. Add gnocchi and cook for 2-3 minutes until slightly golden.
  5. Pour in chicken broth and heavy cream. Bring to a simmer.
  6. Stir in Parmesan cheese and return the chicken to the skillet. Simmer for 5-7 minutes, until sauce thickens and gnocchi is tender.
  7. Stir in spinach if using, and cook for 1-2 minutes until wilted.
  8. Garnish with parsley and serve hot.

Notes

  • Use pre-cooked rotisserie chicken for a quicker meal.
  • Add mushrooms or sun-dried tomatoes for extra flavor.
  • Substitute half-and-half for a lighter version.
