Description
A comforting one-skillet meal featuring tender chicken, soft gnocchi, and a creamy garlic parmesan sauce. Perfect for a quick weeknight dinner.
Ingredients
- 1 lb boneless, skinless chicken breasts, diced
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 (16 oz) package potato gnocchi
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup baby spinach (optional)
- 2 tbsp butter
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add diced chicken, season with salt, pepper, and Italian seasoning, and cook until browned and cooked through. Remove from skillet and set aside.
- In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
- Add gnocchi and cook for 2-3 minutes until slightly golden.
- Pour in chicken broth and heavy cream. Bring to a simmer.
- Stir in Parmesan cheese and return the chicken to the skillet. Simmer for 5-7 minutes, until sauce thickens and gnocchi is tender.
- Stir in spinach if using, and cook for 1-2 minutes until wilted.
- Garnish with parsley and serve hot.
Notes
- Use pre-cooked rotisserie chicken for a quicker meal.
- Add mushrooms or sun-dried tomatoes for extra flavor.
- Substitute half-and-half for a lighter version.
