Description

A hearty and creamy taco-flavored soup packed with ground beef, beans, corn, and spices, perfect for a cozy meal.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (10 oz) Rotel diced tomatoes and green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 cup beef broth
  • 1 package (8 oz) cream cheese, softened
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat a little olive oil over medium heat. Add the diced onion and sauté until softened.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Add the ground beef and cook until browned. Drain excess grease if necessary.
  4. Stir in the taco seasoning and mix well.
  5. Add the Rotel tomatoes, black beans, corn, and beef broth. Stir to combine.
  6. Bring the soup to a simmer and cook for 10 minutes to blend flavors.
  7. Reduce heat to low and stir in the cream cheese until melted and smooth.
  8. Add the shredded cheddar cheese and stir until fully melted and incorporated.
  9. Season with salt and pepper to taste. Serve hot with your favorite toppings.

Notes

  • Top with sour cream, sliced jalapeños, or chopped cilantro for extra flavor.
  • Use ground turkey or chicken as a lighter alternative to beef.
  • Adjust the spice level by using mild or hot Rotel and taco seasoning.
