Description

Creamy Tuscan Chicken is a rich and flavorful dish made with tender chicken breasts simmered in a creamy garlic sauce with sun-dried tomatoes and spinach. Perfect for a comforting dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes (in oil, drained and chopped)
  • 2 cups baby spinach


Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
  3. In the same skillet, add minced garlic and cook for 1 minute until fragrant.
  4. Pour in the heavy cream and chicken broth, stirring to combine. Add Parmesan cheese, Italian seasoning, and red pepper flakes. Stir until the sauce is smooth and thickened.
  5. Add sun-dried tomatoes and simmer for 2 minutes.
  6. Stir in the spinach and cook until wilted.
  7. Return the chicken to the skillet and spoon sauce over the top. Simmer for 5-7 minutes until chicken is cooked through.
  8. Serve hot with pasta, rice, or crusty bread.

Notes

  • You can substitute chicken thighs for breasts if preferred.
  • Use freshly grated Parmesan for the best flavor.
  • For a lighter version, use half-and-half instead of heavy cream.
