Description

Crispy Baked Spicy Chicken Bites are tender chunks of chicken coated in a spicy, seasoned breadcrumb mixture and baked to golden perfection. Perfect as a party appetizer or a flavorful snack.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 cup breadcrumbs (panko preferred)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly spray with cooking spray.
  2. Place the chicken pieces in a bowl and pour over the buttermilk. Let it marinate for at least 30 minutes.
  3. In a separate bowl, mix breadcrumbs, Parmesan cheese, paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper.
  4. Remove the chicken from the buttermilk, allowing the excess to drip off. Coat each piece in the breadcrumb mixture, pressing lightly to adhere.
  5. Arrange coated chicken pieces on the prepared baking sheet.
  6. Lightly spray the tops of the chicken bites with cooking spray.
  7. Bake for 20-25 minutes, flipping halfway through, until golden brown and cooked through.
  8. Serve hot with your favorite dipping sauce.
