- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup buttermilk
- 1 cup breadcrumbs (panko preferred)
- 1/2 cup grated Parmesan cheese
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly spray with cooking spray.
- Place the chicken pieces in a bowl and pour over the buttermilk. Let it marinate for at least 30 minutes.
- In a separate bowl, mix breadcrumbs, Parmesan cheese, paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper.
- Remove the chicken from the buttermilk, allowing the excess to drip off. Coat each piece in the breadcrumb mixture, pressing lightly to adhere.
- Arrange coated chicken pieces on the prepared baking sheet.
- Lightly spray the tops of the chicken bites with cooking spray.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and cooked through.
- Serve hot with your favorite dipping sauce.
