Scale
- 2 cups cooked, shredded chicken
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs (plus more for coating)
- 1/4 cup ranch dressing
- 1 egg
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped green onions (optional)
- 2–3 tbsp oil for pan-frying
Instructions
- In a large bowl, combine shredded chicken, cheddar cheese, 1/2 cup breadcrumbs, ranch dressing, egg, garlic powder, onion powder, salt, pepper, and green onions if using.
- Mix well until the mixture holds together. If too wet, add a bit more breadcrumbs.
- Form into 6–8 patties and coat each lightly with additional breadcrumbs.
- Heat oil in a skillet over medium heat. Fry patties for 3–4 minutes per side, or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil. Serve warm with extra ranch dressing if desired.
Notes
- Use rotisserie chicken for quick prep.
- Can be baked at 400°F (200°C) for 20 minutes, flipping halfway, for a lighter option.
- Freeze uncooked patties for up to 1 month for meal prep.
