Crispy Fried Zucchini is a delicious appetizer or side dish featuring fresh zucchini slices coated in a seasoned breadcrumb mixture and fried until golden and crunchy.
Ingredients
- 2 medium zucchinis, sliced into 1/4-inch rounds
- 1 cup all-purpose flour
- 2 large eggs
- 2 tablespoons milk
- 1 1/2 cups breadcrumbs (preferably panko)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil, for frying
Instructions
- Slice the zucchinis into 1/4-inch rounds and pat them dry with a paper towel.
- Prepare three bowls: one with flour, one with beaten eggs mixed with milk, and one with breadcrumbs, Parmesan, garlic powder, salt, and pepper.
- Dredge each zucchini slice in flour, dip into the egg mixture, then coat with the breadcrumb mixture.
- Heat about 1 inch of vegetable oil in a frying pan over medium-high heat until hot.
- Fry the zucchini slices in batches for 2-3 minutes per side or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve hot with your favorite dipping sauce.
