Description

Crispy Fried Zucchini is a delicious appetizer or side dish featuring fresh zucchini slices coated in a seasoned breadcrumb mixture and fried until golden and crunchy.


Ingredients

  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk
  • 1 1/2 cups breadcrumbs (preferably panko)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying


Instructions

  1. Slice the zucchinis into 1/4-inch rounds and pat them dry with a paper towel.
  2. Prepare three bowls: one with flour, one with beaten eggs mixed with milk, and one with breadcrumbs, Parmesan, garlic powder, salt, and pepper.
  3. Dredge each zucchini slice in flour, dip into the egg mixture, then coat with the breadcrumb mixture.
  4. Heat about 1 inch of vegetable oil in a frying pan over medium-high heat until hot.
  5. Fry the zucchini slices in batches for 2-3 minutes per side or until golden brown and crispy.
  6. Transfer to a paper towel-lined plate to drain excess oil.
  7. Serve hot with your favorite dipping sauce.
