  • 1 cup shredded carrots
  • 1 cup zucchini (grated and squeezed dry)
  • ½ cup finely chopped red bell pepper
  • ¼ cup chopped green onions
  • 2 cloves garlic (minced)

  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • ½ cup breadcrumbs (plus more if needed)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil (plus more for cooking)
  • 2 tablespoons all-purpose flour or chickpea flour


Instructions

  1. Prepare the Mixture: In a large bowl, combine the crumbled tofu, shredded carrots, grated zucchini, bell pepper, green onions, and minced garlic. Stir in ground cumin, smoked paprika, black pepper, salt, soy sauce, olive oil, flour, and breadcrumbs. Mix well until the mixture holds together when pressed. If it feels too wet, gradually add more breadcrumbs, one tablespoon at a time, to achieve the right consistency.
  2. Form Patties: Shape the mixture into 8 small, evenly sized patties, ensuring they are compact so they hold their shape during cooking.
  3. Heat the Pan: Heat a non-stick skillet over medium heat. Add a light coating of olive oil to prevent sticking and add crispiness.
  4. Cook the Patties: Place the patties in the skillet and cook for 4–5 minutes on each side, or until they develop a golden-brown, crispy crust. Avoid overcrowding the pan for even cooking.
  5. Rest and Serve: Remove the cooked patties from the pan and let them cool slightly before serving. They can be enjoyed with your favorite dipping sauce or served in a bun as a tasty veggie burger.
