- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 avocado, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup hummus or tzatziki for topping
- Juice of 1/2 lemon
- Chopped fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add cauliflower rice, garlic powder, onion powder, salt, and pepper.
- Cook for 5–7 minutes, stirring occasionally, until the cauliflower is tender and lightly golden. Set aside.
- Prepare the toppings: slice tomatoes, cucumber, avocado, and red onion.
- Divide the cooked cauliflower rice among bowls.
- Top each bowl with tomatoes, cucumber, avocado, red onion, and feta cheese if using.
- Add a spoonful of hummus or tzatziki on top and drizzle with lemon juice.
- Garnish with chopped parsley and serve immediately.
