Ingredients

  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup hummus or tzatziki for topping
  • Juice of 1/2 lemon
  • Chopped fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cauliflower rice, garlic powder, onion powder, salt, and pepper.
  2. Cook for 5–7 minutes, stirring occasionally, until the cauliflower is tender and lightly golden. Set aside.
  3. Prepare the toppings: slice tomatoes, cucumber, avocado, and red onion.
  4. Divide the cooked cauliflower rice among bowls.
  5. Top each bowl with tomatoes, cucumber, avocado, red onion, and feta cheese if using.
  6. Add a spoonful of hummus or tzatziki on top and drizzle with lemon juice.
  7. Garnish with chopped parsley and serve immediately.
