- 8 oz wide rice noodles
- 2 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1/2 lb chicken breast or tofu, sliced
- 2 eggs
- 2 cups Chinese broccoli, chopped
- 1/4 tsp white pepper (optional)
Instructions
- Soak the rice noodles in warm water for 30 minutes or until softened, then drain.

Notes
- You can substitute Chinese broccoli with regular broccoli or kale.
- Adjust soy sauces to taste if you prefer a lighter or darker flavor.
- Use fresh rice noodles if available, but dry ones work well after soaking.
