Description
A hearty and flavorful potato egg scramble featuring crispy golden potatoes, sautéed onions and bell peppers, fluffy eggs, and melted cheddar cheese. Perfect for a satisfying breakfast or brunch that’s quick to prepare and packed with texture and taste.
Ingredients
Scale
Vegetables
- 2 medium russet or Yukon gold potatoes, washed, peeled, and diced into small cubes
- 1 medium onion, chopped
- 1 bell pepper, chopped
Egg Mixture
- 4 large eggs
- Salt, to taste
- Black pepper, to taste
Other Ingredients
- 2 tablespoons olive oil or butter
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Prep the Ingredients: Wash, peel, and dice the potatoes into small cubes for even cooking. Chop the onions and bell peppers into small pieces so they blend well in the scramble.
- Cook the Potatoes: Heat the olive oil or butter in a large skillet over medium heat. Add the diced potatoes and season lightly with salt. Cook, stirring occasionally, for 10-12 minutes until the potatoes are tender and golden brown on the outside.
- Add Vegetables: Stir in the chopped onions and bell peppers with the potatoes. Continue to sauté the mixture until the onions become translucent and soft, about 4-5 minutes.
- Whisk the Eggs: In a separate bowl, whisk the eggs thoroughly with salt and pepper until the mixture becomes frothy, which will help make the scramble light and fluffy.
- Combine Everything: Pour the whisked eggs over the cooked potatoes and vegetables in the skillet. Gently fold the mixture with a spatula until the eggs are fully cooked but still soft and moist. Sprinkle cheddar cheese on top and allow it to melt slightly before removing from heat.
- Serve It Up: Remove the skillet from heat and serve the potato egg scramble hot. Garnish with fresh herbs like parsley or extra shredded cheese if desired for added flavor and presentation.
Notes
- Use Yukon gold potatoes for creamier texture or russet for crispier potatoes.
- Adjust seasoning with salt and pepper to your preference.
- Add herbs such as parsley, chives, or cilantro for freshness.
- Cheese is optional but adds richness; use your preferred type.
- For a dairy-free version, omit cheese or use a non-dairy alternative.
