Description

These Delicious Vanilla French Beignets are light, fluffy deep-fried pastries with a hint of vanilla flavor. Dusted with powdered sugar, they’re perfect for breakfast, dessert, or a sweet snack with coffee.


Ingredients

  • 2 1/4 tsp active dry yeast (1 packet)
  • 3/4 cup warm water (110°F/43°C)
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 3 tbsp unsalted butter, softened
  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. In a large bowl, dissolve yeast in warm water and let sit for 5 minutes until foamy.
  2. Stir in sugar, eggs, milk, and vanilla extract.
  3. Add 2 cups of flour and the salt. Mix until smooth, then stir in the butter and remaining flour gradually to form a soft dough.
  4. Knead dough on a floured surface for about 5-7 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise in a warm place for 1 to 1.5 hours, or until doubled in size.
  6. Punch down the dough and roll it out on a floured surface to 1/4-inch thickness. Cut into 2-inch squares.
  7. Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry beignets a few at a time until golden brown, about 1-2 minutes per side.
  8. Drain on paper towels and dust generously with powdered sugar before serving.

  • Beignets are best served fresh and warm.
  • You can refrigerate the dough overnight and fry fresh in the morning.
  • Try filling with jam or pastry cream for a twist.
