- 2 1/4 tsp active dry yeast (1 packet)
- 3/4 cup warm water (110°F/43°C)
- 1/4 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk
- 1 tsp vanilla extract
- 3 1/2 cups all-purpose flour
- 1/2 tsp salt
- 3 tbsp unsalted butter, softened
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions
- In a large bowl, dissolve yeast in warm water and let sit for 5 minutes until foamy.
- Stir in sugar, eggs, milk, and vanilla extract.
- Add 2 cups of flour and the salt. Mix until smooth, then stir in the butter and remaining flour gradually to form a soft dough.
- Knead dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise in a warm place for 1 to 1.5 hours, or until doubled in size.
- Punch down the dough and roll it out on a floured surface to 1/4-inch thickness. Cut into 2-inch squares.
- Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry beignets a few at a time until golden brown, about 1-2 minutes per side.
- Drain on paper towels and dust generously with powdered sugar before serving.
Notes
- Beignets are best served fresh and warm.
- You can refrigerate the dough overnight and fry fresh in the morning.
- Try filling with jam or pastry cream for a twist.
